🍌 Banana Muffins (No Baking Powder Needed)

Soft, comforting muffins using just bicarbonate of soda and yoghurt for lift.

Ingredients (Makes 10–12 muffins)

  • 2–3 ripe bananas (approx. 250g peeled)
  • 75g melted butter or sunflower oil
  • 100g soft brown sugar (or caster sugar)
  • 1 large egg
  • 1 tsp vanilla extract
  • Âľ tsp bicarbonate of soda
  • 2 tbsp plain yoghurt
  • ½ tsp cinnamon (optional)
  • Pinch of salt
  • 180g plain flour
  • Optional: chopped nuts, dark chocolate chips, or raisins

Method

  1. Preheat oven to 180°C (160°C fan) / 350°F / Gas Mark 4. Line a muffin tin with paper cases.
  2. In a large bowl, mash the bananas with a fork until mostly smooth.
  3. Stir in the melted butter/oil, sugar, egg, vanilla, and yoghurt.
  4. Add the bicarbonate of soda, cinnamon (if using), and salt. Mix lightly.
  5. Fold in the flour until just combined – do not overmix.
  6. Spoon batter into muffin cases (about Âľ full). Add toppings if desired.
  7. Bake for 18–22 minutes, until golden and springy to the touch.
  8. Cool on a wire rack — or enjoy one warm straight from the tin.
Tip: For a crunchy top, sprinkle with demerara sugar before baking.
